How to Boil Corn

How are you cooking seasonal, delicious corn right now? Most of us reach for seasonings to make it a touch sweeter, but did you know you can get really tasty corn using only natural ingredients—no extra seasonings needed?

Today I’ll show you how to boil corn with only natural ingredients so it’s flavorful and clean-tasting.

Corn Recipe


First, grab three fresh ears of corn. If you just picked them up, check out How to store corn to keep them fresh longer!


Tip 1 for perfectly steamed or boiled corn: remove the husks but leave one layer on. That helps the corn retain moisture while cooking, so the kernels stay juicier and more flavorful.

So don’t strip the husks completely—leave that last layer on while you cook.


Tip 2: save the corn silk instead of tossing it. The silk adds a subtle sweetness and toasty flavor, so toss it into the pot with the corn.


Tip 3: don’t cut off the cob end. A lot of the corn’s sweetness is concentrated at the base, so cook the whole cob. If it’s too long, trim it and cook the pieces together.

If it’s extra long, just cut it down so it fits in your pot and cook the pieces together.



Rinse the prepared corn and the silk thoroughly under cold water.


Now grab a large pot. Add 2.5 liters of water and about 1½ tablespoons of salt—roughly as salty as seawater and stir to combine.

If you want extra sweetness, add a little New Sugar instead of regular granulated sugar. Regular sugar can make the corn a bit sticky and may burst the kernels, so New Sugar is a better choice.


Stir until the salt dissolves completely.


Add the corn silk and the ears of corn to the pot. Cover and bring to a rolling boil over high heat; boil for 20 minutes.



After 20 minutes, reduce to medium heat and simmer for another 30 minutes. Turn off the heat and let the corn sit for 5 minutes to finish steaming.


Remove the cooked corn from the water right away so the flavor stays locked in.


The toasty flavor from the silk and the sweetness from the cob come together to make seriously delicious boiled corn!
