‘Pierre Hermé Paris,’ the French haute-pâtisserie often called the \”Picasso of desserts,\” is set to open at Galleria Department Store’s luxury food hall Gourmet 494 on May 1.

Until now, Pierre Hermé has appeared in pop-ups at major department stores and offered a limited selection at hotels like Park Hyatt Seoul, Park Hyatt Busan, and Andaz Seoul Gangnam. With a permanent spot at the Galleria, fans can now enjoy a wider array of products and the full brand experience any time.

Nine new creations debut with the store — a spring-inspired collection that pairs Pierre Hermé’s inventive flavor combinations with seasonal freshness and the brand’s signature elegance.

The flagship Aria Tart amplifies pistachio’s richness with a hint of orange blossom. Layers of a pistachio-syrup–soaked biscuit, cream and house-made paste are finished with an orange blossom mascarpone, delivering both a springlike aroma and a striking visual.

For lovers of bright, zesty desserts, the Infiniment Citron Tart and the Azur roll cake stand out. The Infiniment Citron belongs to the brand’s reduced-sugar-and-fat line and highlights pure lemon flavor with a paste made from whole steamed lemons and a lemon curd cream. The Azur roll cake, an Asia-exclusive, uses a soufflé sponge for a feather-light, moist texture and pairs yuzu with chocolate for an elegant contrast.

Talisman balances salted caramel mousse with vanilla bean custard pudding and sponge to deliver both sweetness and depth. Pain au Chocolat & Mogador pairs passion fruit with milk chocolate so you get a bright, slightly tangy note alongside rich cocoa.

The brand also explores its signature Ispahan flavor across several items. Ispahan madeleines, Ispahan sablés and an Ispahan croissant translate the rose-raspberry-lychee trio into baked goods and pastries, making the brand’s hallmark profile easy to enjoy in different formats.

Finally, the Infiniment Vanille Palmier reinvents the classic French puff pastry palmier with vanilla for a crisp bite and deep, lingering flavor.
